The EX has less ribbing, and it's a lighter horn. There are also a few keywork improvements. I found them to be a little more free-blowing and a little brighter than the older ones, but not much brighter.

The old ones are very good; I played one all through college. If you're looking for something with a "Mark VI" style sound, this isn't it, but they have a very refined sound.

I agree with J. Max. While you won't find a "Mark VI" sound in either of these tenors, both are very robust. In my experience, I found the EX to be a little stuffier and clunkier than the original custom series. This was my experience with one YTS 875 that was set up by Saxquest and one 875EX that was only regulated by my tech in Omaha, NE.
