kurt elling for sure...he said in a interview e used to transcribe sax bebop solos, and vocalise (i think it's the right term) them. This means he created lyrics to match the solo. In his nature boy version on youtube he clearly sound like a tenor sax.

Van Morrison - listen to his tone, phrasing and inflections on any of his great albums from the 70's and early 80's and you'll hear it.
Probably cause he plays alto himself? I've found that I phrase like a sax player on guitar and keys too. I guess it's ingrained in my brain :)
