At Weinermusic dot com I see the options when ordering a diamond inlay alto
mouthpiece are S5L, S5S or M5S, M5L

I suppose the first and second character mean: Bore and opening but does the
S or L mean short and Long lay ??

This is the meaning: Small/Medium/Large (Chamber)- "5" (Tip opening) - (Short/Medium/Long) Facing
