To me the descriptions of these mouthpieces sound very alike; medium chambered, medium roll over baffles.
I already play a meyer, but would a Java sound very different from my meyer? Would it have more edge, or how else would it be different?

Speaking strictly stock condition here... I think the Javas have a bolder mid-range projection to them than Meyers. The baffle a slightly higher longer rollover. Maybe a small chambered Meyer would be similar to a Java.

The other thing about a Java is the beak profile is slimmer which creates faster air and a more focused sound.

I wouldn't describe Javas as edgy - maybe punchier.
