Look at the soft soldered joints (pillar bases, key guard bases, etc.) - if they appear to be silver or lighter than the surrounding metal, then it's lacquered. If the soft soldered joints appear to show no change in colour, then it's plated.

You can also test for electrical conductivity - if you can complete an electrical circuit with the sax body (making contact with the surface), then it's plated.
