I use C or Bb depending on how I originally learned the song. If I learned it on tenor (or if I am learning it intending to play it on tenor) then I switch to Bb. For nearly all of the things I learn specifically for the EWI I tend to just leave it in C. The guy who writes the charts for my usual wedding band just writes everything in C for me.

I just leave it in Bb so I don't have to remember which song to change keys on. I'm so used to sight transposing C parts to Bb I once screwed up a gig by accidentally transposing a Bb part up a whole step.
Depends on the tune. If I'm doubling with alto, Eb. Tenor, Bb. If it's just EWI, it doesn't really matter to me, but usually I'll leave it in Eb or C by default.
Bb works the best for me. Since I normally play sop and tenor, I have an exception of what the next note I plan to play sounds like. I think that's one of the things that bothers me about playing alto. My subconscious keeps telling me the horn is not playing the right note. Same goes for the WX7 in C.
