That picture is out of a piano book. Take a look at the chord symbols above what I believe is some sort of guitar symbol. If I transpose those chords from C to E flat, will the resulting chord be accurate for my alto? Or is there something else involved?

If I understand you correctly, yes.

If you transpose the chord to alto, it will be a Bm7. Bm7 on an Eb instruments sounds like Dm7 in concert pitch (piano, guitar).
