I want to ship a saxophone to New Zealand but I recall the size limits (to Australia, at least) of USPO are prohibitive. Has anyone shipped via UPS? Cost? How do people in the USA manage this? Thanks for your help.

Strangely enough, New Zealand is not as prohibitive in size limits as Australia (shipping from the US at least). USPS Priority Mail limits to New Zealand are

Max. length 60",
Max. length plus girth combined 108"
Maxium weight: 66 pounds.

You can ship a baritone by those guidelines.
