I just had an operation on my dominant (right) hand and can't use it for at least the next week... any suggestions on how to support my sax (alto, tenor, bari)/ what kind of not-too-boring exercises I could do with just my left hand and still maintain my embouchure?

Altissimo!

Playing really high is mostly a left-handed sport with just a little light work for the right hand.

I can't help with the 'support' issue for tenor and bari, but I've been known to sit the bow of my alto on the chair (between my thighs) and play 'clarinet style'.
As for exercises.. Let your imagination run amok.

That's what I've been doing, but it's still so gosh darn hard to stay away from my sax, especially since I have a concert coming up...

I'd work on how many notes I could play with the palm keys, in the first register. You should be able to do a nice G major pentatonic with a little experimentation (depends on how your palm keys are set up...)

This could be the beginning of work on a Roland Kirk approach.

Stick to the alto, set the bottom on the chair, and like Enviroguy said, work on altissimo. :) Either that or get yourself a one-handed sax made.
