I was wondering what key "A Night In Tunisia" is supposed to be played in because I have three books with it, but they all have different key signatures.

According to David Bakers' "How To Learn Tunes", it is in Dm (concert). That is consistent with the Jazz Improvisation Workshop play-along I have for tenor which is in Em tenor (Dm concert).

There are thousands of versions of this song, so it is inevitable that many will vary from the original key.
