Well, just look at a general definition of each word:

ad-lib: make it up (improvise)
rubato: play with the rhythm, me flexible with the rhythm within the tempo
cadenza: an extended, ornate, unaccompanied solo

So, you make up an unaccompanied solo on the spot while playing with the rhythm a bit. Heh, sounds like fun 8)
